Whether you're baking your own cupcakes or simply decorating store-bought ones (I'd totally choose this option in summer to avoid putting the oven on!), these cupcakes are a cinch to make. And eat! 😉
Easy Summer Beach Cupcakes
These easy summer beach cupcakes would be perfect for so many summer party themes like flamingo, tropical party, ice cream, pineapples, beach or pool parties...and the list goes on!
I used flamingo, watermelon, pineapples and ice cream (some of my fav summer icons!) as the sugar decorations on top of the "sandy beach" frosting, but you can totally vary the sprinkles and sugar toppers to match your own summer theme!
My chosen cupcakes are simple vanilla and chocolate (store-bought), and the frosting is my go-to easy cream cheese frosting with a dash of the good stuff - coconut rum!
Next time I make these, I plan to up the ante in the pina colada front, with a hollowed out cupcake filled with pineapple compote! That would be so good, right?
I only had that idea later on, but the coconut rum was quite enough to take my standard cupcake frosting into summer party deliciousness!
Of course, if you're making these for kids, you can omit the coconut rum in the recipe, and substitute it with a teaspoon of vanilla, or lime or pineapple juice for a tropical taste.

Easy Summer Beach Cupcakes
Delicious, easy cupcakes with a pina colada inspired frosting - perfect for summer parties!
ingredients
- 12 cupcakes (homemade or store-bought)
- 125 g (5 oz) cream cheese
- 4 heaped tablespoons confectioner sugar (icing sugar)
- 1 shot coconut rum (or pineapple or lime juice)
- butter shortbread cookies
- summer sugar decorations and sprinkles
instructions
- In a bowl mix the cream cheese, sugar and coconut rum until combined. The frosting should be firm but not too thick.
- In another bowl, crumble the cookies until they resemble fine sand. You can use a food processor or bash them with a rolling pin.
- To decorate the cupcakes: Dip a cooled cupcake into the frosting, then immediately dip them into the cookie crumbs. Shake off the excess crumbs.
- Decorate the top with summer sugar decorations and sprinkles. Use a little frosting to secure the toppers in place if needed.
