Jack-O'-Lantern Halloween Cookie Cake
My obsession with these cookie cakes started this summer when I made my very first cookie cake in the shape of a pineapple.
Since then, I've been dreaming up other fun shapes to create, hence today's Jack-O'-Lantern inspired Halloween cookie cake!
This cookie cake is SO easy to make and combines the best of both cookie and cake worlds - buttery shortbread cookies, sandwiched together with chocolate cream cheese frosting, topped with ridiculous amounts of candy. Well, it is Halloween after all! 🎃🍬👻
Jack-O'-Lantern Halloween Cookie Cake
Last time I made a cookie cake, I was inspired by summer and by this giant pineapple cookie cutter I found at my local craft store.
For this Halloween Jack-O'-Lantern cake however, I did not have a giant cookie cutter. So in true DIY fashion, I made my own!
I simply drew a Jack-O'-Lantern template, printed it, cut it out and transferred it to a cardboard template.
To use my DIY "cookie cutter", I placed it on top of my cookie dough and cut the cookie out using an x-acto knife. With a regular kitchen knife you just don't get the same smooth, sharp results.
Anyways, I think it turned out super cute. What do you think? 😃
Cookie cakes are super easy and quick to make too, as you only make one giant cookie. Or two.
I made my own cream cheese chocolate frosting for the center and cream cheese orange frosting for the cookie top. But you could shorten your time in the kitchen by using store-bought frosting. Nothing wrong with that!
Of course, the only other ingredients in this cookie cake is orange candy and treats like macarons (again all store-bought).
My kids loved helping me to decorate this Halloween cookie cake with orange candy, so it's a fun tradition to start every year, and will definitely be on our fall bucket list from now on! 😍👌
The recipe I used for the sugar cookies is identical to the pineapple cookie cake, but I modded the frosting slightly for Halloween with a cream cheese chocolate recipe.

Jack-O'-Lantern Halloween Cookie Cake - this recipe so easy to make and decorate for your Halloween parties and celebrations!
ingredients
Cookie Dough Recipe
- 2 cups room temperature butter
- 3 cups sifted icing or confectioner's sugar
- 3 teaspoons vanilla extract
- 6 cups flour
- 4 teaspoons baking powder
- 2 eggs
- 1 teaspoon salt
Cream Cheese Frosting
- 1 1/2 cups (400 g) cream cheese
- 10 cups sifted icing or confectioner's sugar
- orange gel food coloring
- 2 teaspoons vanilla extract
- orange candy and macarons for decor
- 1 cup 100% cocoa powder

Cookie Dough Recipe Instructions
- Pre-heat your oven to 200 deg Celsius or 400 deg F. In a mixer fitted with paddle attachment, cream butter and sugar together.
- Add eggs and vanilla and mix to combine.
- In a separate bowl, add flour, baking powder and salt. Mix, then slowly add to egg butter mixture with mixer on low.
- Mix until all the flour is combined and dough does not stick to your fingers. You can add a little more flour if needed to achieve this consistency.
- Divide dough in two equal balls. Take one half of the dough and roll to about 1/4 inch (0.5 cm) thick. Place onto a baking tray lined with parchment paper.
- Use your template and an x-acto or very sharp knife to cute out your template outline.
- Take the other dough half and roll to about 1/4 inch (0.5 cm) thick. Place onto a baking tray lined with parchment paper.
- Use your template to cut another pumpkin outline, and the Jack-O'-Lantern's full face.
- Bake both cookies for about 12-15 minutes until lightly golden on the edges. Let cookies cool on the tray to avoid crumbling.
- Place cooled cookies on wire rack to cool completely before frosting.
Cream Cheese Frosting
- In a mixer fitted with paddle attachment, combine cream cheese and sugar, one cup of sugar at a time.
- Add vanilla and mix to combine.
- Divide frosting into two bowls. Add a few drops of orange food coloring to one bowl, and 1 cup of cocoa powder to the other. Mix each until fully combined.
Assembling The Cookie Cake
- Place the pumpkin outline cookie on a serving dish and pipe the chocolate frosting on, starting from edges towards the center. Leave a 1/2 inch or 1 cm border all the way around.
- Place the jack-O'Lantern cookie top half on top to sandwich the cookies together.
- Frost the cookie top with orange frosting. Fill the eyes, nose and mouth cavities with more chocolate frosting, level with the cookie top.
- Decorate the entire cookie with various orange candy and treats like macarons.
