For my Dia de Los Muertos dinner part, I made delicious Mexican Almond Horchata to serve to my guests alongside our fun sugar skull cookies (recipe for the cookies here).
Horchata is a delicious, non-alcoholic drink that is perfect for the whole family and ideal for fall entertaining! It's traditionally served cold over ice, but my kids love it as a warm drink on cold days!
Quick and Easy Mexican Almond Horchata
A few weeks ago, I watched a cooking program from the UK (The Hairy Bikers), where they talked about Spanish Horchata, made from tiger nuts.
But the Mexican Horchata recipe is a little different, and made with rice instead. The Mexican recipe involves soaking rice overnight, then straining the rice out, etc...which I did not fancy doing at all!
I basically wanted a recipe that was quick and easy, but that still had those Mexican flavors.
So I took a leaf from the Spanish Horchata book, and modified the Mexica Horchata recipe a little to suit my impatient nature. The resul was as delicious drink that has become our family-favorite this time of year!
Instead of tiger nuts though (which I can't find where I live) I used almonds instead. More precisely, grated almonds (or almond flour / powder).
You could totally make the almond powder yourself by grinding almonds in a food processor, but that kinda defeats the point of making this a quick recipe...
So I used standard almond meal or powder from my supermarket's baking isle. Nothing wrong with that.
