Do you celebrate with pancakes day on Mardi Gras? It's tradition in our house, and this year I'll be making my kids favorites - banana and oatmeal pancakes for pancake day! 🥰
These healthier pancakes have become a staple at our house, and we cook them for breakfast often. They're like a healthy bowl of oatmeal, but in pancake form, which pleases the whole family!
Plus, they're SO easy to make in a blender, and quite inexpensive too!
My family loves these pancakes, and when you use gluten-free oats, it's perfect for anyone who has an intolerance (like my husband).
My kids don't really like anything made with gluten-free flour, so this is such a tasty "compromise", without actually compromising on flavor.
The original recipe came from a buttermilk pancake recipe from the NYT Cooking site. But I've modified the recipe a bit.
The recipe for these pancakes uses ripe bananas, which is also great to use up any fruit that's past its best, or that looks a little brown and mushy.😉
In fact, they taste much better with really ripe, brown bananas!
These banana and oatmeal pancakes come together so quickly, and make a great snack, breakfast or dessert too.
For dessert, you could serve them with fresh fruits and ice cream. YUM!
Gluten Free Banana and Oatmeal Pancakes
Yield: 12 five inch pancakes

Gluten Free Banana and Oatmeal Pancakes - healthy pancakes made in a blender! So easy, quick and delicious for breakfast, snacks or pancake day!
Ingredients
- 2 cup rolled oats (use gluten-free if you have a gluten intolerance)
- 1/4 cup honey
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup plain, thick yogurt or buttermilk
- 2 large eggs
- 2 ripe bananas
- 1 teaspoon cinnamon
- 2 teaspoon vanilla extract
- milk for consistency
- vegetable oil for the pan
- Optional: honey and fresh berries for serving
Instructions
- In a blender add the "wet" ingredients: bananas, eggs, honey, yogurt, vanilla, followed by the dry: cinnamon, oats, baking soda and baking powder.
- Turn on the blender and mix until smooth, but thick. Add a little milk if needed to loose the mixture.
- Let the mixture rest for about 10 minutes to thicken further.
- Heat a large non-stick frying pan, then add a tablespoon of oil.
- Drop the batter onto the frying pan using a ladle, and and cook on medium-low until heat you see bubbles appear on the surface of the pancakes, and the bottom is brown. Do not overcrowd the pan with pancakes.
- Flip the pancakes, and cook until brown. repeat for the remaining batter.
- Optional: Serve with honey and berries on top.
