It's Mardi Gras tomorrow and with St Patrick's Day around the corner, I thought this year I'd make green pancakes to celebrate, 😁 hence these Matcha Green Tea savory pancakes!
My kids love pancakes or French crepes, and in France we often have savory ones when on vacation. They serve them with smoked bacon, cheese and an egg on top so I decided to make savory pancakes for them, which would be awesome for breakfast, brunch, light lunch or snack!
Matcha Green Tea Savory Pancakes
The idea of making green pancakes or French crepes was mainly to honor the St. Patrick's Day colors, but also because I was trying to use up the Matcha Green Tea my husband bought and didn't like!
He bought the Matcha powder online to basically make green tea at home, but we just didn't like the flavor . So instead, I decided to come up with a few recipes to incorporate it into baking or cooking, where the pronounced flavor is a little easier or milder for us amateurs 😉
In fact, my kids loved the Matcha in this savory pancake recipe so much that I'm thinking of other recipes, like a Matcha and chocolate cake next!
The Matcha taste is still there in these pancakes but it's much more subtle, and I think it lends itself beautifully to savory notes!
Having a sweet tooth, I also tried these pancakes with a sweet filling, and it works! I used a dollop of my homemade orange marmalade and it was DELICIOUS! I'm thinking chocolate spread, honey, jam or cream and berries would work too.
These pancakes are great for brunch or an after-school snack. You can also serve them with a side salad and make it a nice and easy lunch like they do in France!
For this recipe, I modified my go-to French crepe pancake batter a little so you can add sweet or savory fillings to your pancake, and maybe let your guests make their own pancakes in a pancake bar?
I also noticed that the Matcha powder did alter the consistency of the pancake batter quite a bit, despite the fact that we only added a little of it.
So the end result is a pancake that is a little thicker than the classic French crepe. If you make the pancake too thin, it tends to dry out too much and becomes brittle.
For the fillings of my savory pancakes I chose the classic French brunch option of crème fraiche, cheese, bacon, eggs and added caramelized onions and herbs. But like I said, you can top these with pretty much any topping, sweet or savory!
In France they close the pancake edges to make a square parcel, but since these Matcha pancakes are a little thicker than the usual crepes, they were a little more tricky to fold. But they tasted great whether folded or served open! 👍
If you can't drink the Matcha as a green tea, then these pancakes are a great alternative to benefit from its healthy properties. Just be sure you watch the fillings you use! 😉
Matcha Green Tea Savory Pancakes

Matcha Green Tea Savory Pancakes - quick, easy, healthy French crepes to make for breakfast, brunch, snack or your St Patrick's Day celebrations!
Ingredients
- 1 cup flour
- 1 tablespoon Matcha green tea powder
- 1 1/4 cup milk
- 1 tablespoon salted melted butter
- 1 egg
- cooking oil
- Garnishes of choice: crème fraiche, grated cheese, smoked bacon, caramelized onions, fried egg, chopped herbs
Instructions
- Sift the flour and Matcha together in a bowl.
- Add 1 cup of the milk, the butter, egg and whisk to combine.
- If needed add remaining 1/4 of milk to achieve a runny, thin batter consistency.
- Using a paper towel, drizzle a very thin layer of cooking oil on a non-stick pancake pan or frying pan and wipe off the excess oil.
- Heat the pan over a medium heat.
- Add a ladle of the pancake batter to the pan and tilt and rotate the pan to form a thin crepe.
- Wait until one side in fully cooked (the edges should come loose from the sides of the pan and the pancake will slide off easily).
- Flip it and cook on the other side while you add your garnishes on top.
- Serve at once.
