No Bake White Chocolate Strawberry Tart
Mother's day is coming up, and if you need a simple and delicious dessert to impress and celebrate mom, then this white chocolate and strawberry tart recipe is it!
With a few handy pantry staples and a punnet of fresh strawberries you can whip up this tart in no time at all, without the need to turn on your oven, which is always a bonus in my book! 👍
I also made a delicious fresh strawberry sauce to serve with this tart for extra indulgence, but if you don't like things too sweet, then simply serve with extra fresh sliced strawberries for a tangy contrast!
No Bake White Chocolate Strawberry Tart
This no-bake white chocolate and strawberries tart recipe is perfect for husbands and kids to make together to surprise mom with! It's so simple to make and requires very little effort, so no excuses! 😉
You can substitute the Biscoff or Spéculoos biscuit base for a short-crust, ready-rolled pastry like I did in this recipe, but I decided to change things up a bit and make it a no-bake easier version of this tasty tart!
I'd love to change up the biscuit type next time when making this tart, and use maybe a saltier cookies or biscuit to see how the flavors will marry together.
The main filling ingredients are basic pantry staples like white chocolate, creams and gelatin leaves. So nothing out of this world or too expensive either.
I used a glass tart pan for this recipe, but you can use a loose-bottom tart pan also. The base has butter on it and cutting the slices out of the cold pie is no trouble at all, so either way you'll have beautiful tart slices to serve to your guests!
This white chocolate and strawberry tart is a little sweet, so you only need a thin slice, which makes it a really budget-friendly dessert also! 😉.
Depending on the season, you can also serve this tart with other fresh fruits that would pair well with white chocolate and counteract its sweetness like raspberries, passion fruit, blueberries, etc.
For the strawberry sauce, nothing simpler than fresh fruit and sugar, simmered gently and you have the best sauce for an array of dessert - from ice creams, to cakes, puddings and I have even added it to my breakfast toast in the morning!
You can make the sauce a little thinner by pureeing the strawberries and passing them through a sieve to remove the seeds and pulp, but I like mine chunky.
This white chocolate and strawberry tart recipe would be great for any occasion or celebration, and I'm thinking summer gatherings like picnics, potluck dinners, 4th of July BBQs and the like, would be a perfect occasion to serve this pretty tart to your guests!
For décor only, I added a little chopped mint and a few white, organic flowers. You can remove those before serving if you like.

No Bake White Chocolate Strawberry Tart - quick and easy, economical recipe with just a few pantry staple ingredients, and seasonal strawberries!
Ingredients
Strawberry and White Chocolate Tart
- 400g white chocolate broken into pieces
- 300 ml double cream
- 4 (12g) gelatin leaf
- 400g Biscoff or Spéculoos cookies
- 100g salted melted butter or margarine
- 100g strawberries for décor
Strawberry Sauce
- 200g strawberries sliced (not chopped)
- 100g sugar
- juice of 1/2 lemon
Instructions
- Place cookies in a food processor to make crumbs or use a rolling pin to crush them inside a plastic bag.
- Add cookies to a bowl with melted butter and mix to combine
- Add cookies to a tart pan and press with fingers to fit edge of pan and then with the back of a spoon or bottom of a flat glass.
- Chill crust in the fridge for at least 30 minutes.
- Meanwhile, place gelatin in cold water for 10 mins to soften. Taken them out and squeeze excess water with your hands.
- Add gelatin to sauce pan with cream and heat gently until dissolved and nearly boiling point.
- Pour over chocolate to melt. Cover with a plate for 5 minutes then mix well to get a smooth ganache.
- Add ganache to chilled tart base and chill for at least 1 hour until the center is set.
- Add sliced strawberries on top just before serving and serve with strawberry sauce or fresh sliced strawberries on the side.
Strawberry Sauce
- Place strawberries, sugar and lemon juice into a sauce pan and bring to a medium heat until the mixture begins to boil, stirring occasionally.
- Reduce the heat and simmer for about 20 minutes until the sauce is thickened.
- Remove from the heat and let it cool down to room temperature.
- Optional: You can puree the sauce for a smoother texture and pass it though a sieve.
