Strawberry and Cream Layer Cake
Strawberries have been on my mind and plate lately, and I'm not complaining! They're one of my favorite fruits and so versatile in jams, desserts, drinks and appetizers alike!
Of course, one of the classic ways to serve strawberries is with a big bowl of cream! So to crown our strawberry season in style, I decided to bake up a storm with this easy but oh-so pretty strawberry and cream layer cake!
Strawberry and Cream Layer Cake
This cake is easy to bake and decorate, and perfect for any occasion you may be celebrating from now until end of summer. Think birthdays, baby and bridal showers, to 4th of July, family BBQs and picnics to name a few occasions in which this cake will go down a treat!
This layer cake is a slight variation on my lemon and berries cake that I shared here on the blog a while back.
I varied my go-to vanilla sponge cake a little to have a thicker layered cake and added strawberries instead of blueberries.
For this recipe, I also flavored my cake with vanilla instead of lemon, so you can see how versatile this recipe is.
The frosting used in this cake recipe has a creamy and light consistency and it's not too sweet, which I love! The frosting is super delicious and holds very well in the heat, despite being super creamy. This is because of the Mascarpone cheese I use in it.
I also love it that this cake has such a rustic look to it, making it the perfect homemade cake par excellence, which doesn't take hours to decorate and doesn't require a degree in cake leveling and no fancy cake decorating tools either! 😉
Sometimes you just need a good ol' fashioned cake like that, am I right?
For the décor of this cake I was inspired by a cake I saw on Pinterest from that looked so pretty! I then used fresh strawberries to organic daisies from my garden to decorate it, but you can use any edible flowers to make your cake look like a pretty picture!
This cake can be made and filled and refrigerated for up to a week in advance. You can then decorate just before serving if you wish, or freeze the cake layers ahead of time in plastic wrap and defrost them in the fridge before frosting and decorating the day before.

Strawberry and Cream Layer Cake - quick, easy and delicious vanilla cake with a creamy frosting and fresh strawberries perfect for any summer party!
Ingredients
Vanilla Cake Sponge: For a 3 layer six-inch diameter cake
- 250g salted butter
- 250g sugar
- 5 eggs
- 1 teaspoon vanilla extract
- 250g sifted flour
- 11g baking powder
Cream Frosting & Filling
- 250g Mascarpone cheese
- 1/4 cup icing sugar
- 1 cup double cream
- 1 teaspoon vanilla
- 1 cup chopped fresh strawberries
- 4 tablespoon strawberry jam
- Extra strawberries for décor and edible flowers
Instructions
Vanilla Cake Sponge
- Cream butter and sugar together until fluffy and pale.
- Add one egg at a time, beating after each addition.
- Add vanilla and mix to combine.
- Fold the flour and baking powder into the egg mixture with a large metal spoon.
- Divide batter into 3 six-inch round, greased baking pans. TIP: I used cake collars to ensure even rise in the oven (so no need to level the cakes after baking).
- Bake at 180 degrees Celsius for 30 minutes or until a skewer inserted into the center of the cakes comes out clean.
- Let cakes cool in the pan for about 5 minutes before removing them to completely cool onto a wire rack.
Cream Frosting & Decorating
- Whisk Mascarpone and icing sugar together until combined.
- Add cold cream and vanilla and whip until you get soft but firm peaks.
- Place one layer of cake onto a cake place with flat side up. Add a heaped tablespoon of jam on top, followed by a generous amount of cream.
- Top with about two tablespoons of chopped fresh strawberries.
- Add a second layer of cake on top. press firmly to set it in place. Add jam, followed by cream and more fresh strawberries as previously.
- Top with last layer of cake. make sure cake is level by pressing firmly on top.
- Finish with a layer of cream on the top layer of the cake, fresh strawberry halves and edible flowers for the décor.
