Since then, I've been dreaming up other fun shapes to create, hence today's Jack-O'-Lantern inspired Halloween cookie cake! This cookie cake is SO easy to make and combines the best of both cookie and cake worlds - buttery shortbread cookies, sandwiched together with chocolate cream cheese frosting, topped with ridiculous amounts of candy.
